Tesco foodie challenge The great Irish steak off

This week I am  taking part in the #tescofoodiechallenge. so I had to put my thinking hat on , and Create a show-stopping summer-inspired recipe using the best of Irish steak, lamb, mince, chicken or pork from the Tesco range within a budget of €20. Right up my street eh…. By sticking to my roots, my main goal was to get as much “bang” “burger”  for my buck, (we are feeding families here). So I was aiming for a feast.

My creation “The great Irish steak off is born…3 mini recipes, that are doable, no matter what your cooking ability is. With our unpredictable Irish weather, there’s no faffing about with marinades (it could be raining tomorrow).”All we need is the sunshine, a shopping list, a barbecue, and go!! Let the beef and lamb speak for itself. The ingredients are Irish, simple ,tasty, and healthy with not a mungbean or juniper berry in sight. On your marks…. Get set… STEAK .

Lamb and mint Lettuce cups#TescoFoodieChallenge

Ingredients

Irish Lamb Rump Steaks

1 onion

An iceberg lettuce head

125g Creme Fraiche

Fresh mint

Method

  • Take your Irish Lamb Rump Steaks out of the packet to rest at room temperature
  • Season the lamb with salt and pepper
  • Cut the stalks of the mint and chop  finely and mix into the creme Fraiche
  • Chop and fry 2 onions on a pan until they are soft and golden.. (1 for the lamb and 1 for the mini burgers)
  • Cook the lamb Rump steaks  on a hot pan or barbecue for around 20 to 30 mins (just to your liking)
  • Divide the iceberg lettuce into cups. (any leftover shred it for the mini  burgers
  • Cut the fat off the lamb and shred
  • Season again with salt and pepper…
  • Build your cups. Adding the onion first. Then the shredded lamb. Finishing off with dollop of Mint creme fraiche

Mini Irish beef burgersTesco foodie challenge

Ingredients

Tesco healthy living Irish Beef Mince 388G

1 grated onion

1 bunch of fresh thyme

Tesco 9 Mini Pre-Sliced burger Buns (dressed with fried onion, shredded lettuce)

Method

  • Grate the onion and chop your thyme, removing the hard stems
  • In a large bowl add the mince, onion, thyme, salt, and pepper.
  • Get your hands in a give it a good mix
  • Empty the mixture onto a chopping board and bind together and flatten with your hand. Make the shape of a large burger
  • With a small cup or glass cut out your burgers (you will get 8 out of the mixture
  • Fry on a hot pan or barbecue for around 4 mins each side.
  • Dress burger buns  with shredded lettuce, fried onion, crown with your mini burgers and ketchup

Irish Sirloin steak Kababs

Ingredients

Tesco Irish Beef Sirloin Steak 200GTesco foodie challenge

1 onion

Method

  • Open steak and leave it to rest at room temperature for 20 mins
  • Season steak with salt and pepper
  • Cut the steak into around 1-inch bite size cubes  .. try and cut each piece of steak the same size so it will cook at the same time
  • Chop the onion, try and get it the same size as the steak pieces too
  • Build your kebabs on skewers .. steak, onion, steak , onion
  • Fry on a hot pan or barbecue for 8 to 10 mins turning halfway

Easy Creme Fraiche slaw

Ingredients

½ head of white cabbageTesco foodie challenge

2 carrots

1 onion

125g Creme Fraiche

Method

Grate the onion, carrot, and shred cabbage.

Season with salt and pepper. Add creme Fraiche. And mix  

(all my recipes are slimming world friendly.. by using fat-free creme Fraiche, you only need to syn the burger buns which work out at 3 and a half syns per burger.. )
