Healthy pot noodles .. …
Today was one of those days,s were we were on the run. I got my
hair done at 9.30 (by the way Sue I love it). Went to our Parent and toddler group at 10.30.. then off to view “yum,s” preschool for September at 1 0 clock. (I know I can’t believe it either) then back home for lunch at 1.30. We had around 40 mins for lunch .. (between eating it and cooking it) before “yum” turned into a gremlin.. yep this can happen if she doesn’t have her nap by 2 o clock.. and we were starving … I had to get some grub into us fast . So healthy pot noodles it was.
These bad boy,s are full of flavour… and super speedy.. the added bonus is that we usually have all the ingredients in with out having to take a trip to the shops.. (that never ends well with a hungry, tired toddler) So I was winning!!
.. Any mammy,s with wrecked hungry children this recipe is a godsend!! Also, any slimming world folks, fancy giving these a whirl this recipe is free on extra easy..
(feeds a family of 4 😉 or 2 very hungry gremlins
olive oil/sesame oil or frylight
140g of medium egg noodles
4 chicken breasts
1 garlic clove
2 tablespoons of frozen corn
2 tablespoons of frozen peas
1 chicken stock cube
1 tablespoon of soy sauce
(you will need a saucepan, a sieve and a Wok )
cook noodles according to the packet.. (usually in boiling water for 4 mins) when they are cooked drain in a sieve and spray with olive oil or fry light .. leave to one side
spray your wok with olive oil/ sesame oil or fry light and heat on a medium heat
chop chicken breasts and add to the pan.. cook for 15 mins turning and making sure all sides is cooked
add garlic .. frozen peas and corn and cook for another 15 mins
add a crumbled chicken stock cube and soy sauce..
Finish off with the drained noodles .. mixing the whole lot together in the wok and serve in pots x
