Meatballs are a huge hit in “yummy” HQ. So much for ages I,ve been trying to make them in less time-consuming .. than in my original recipe… but still taste pretty dam good. Usually meatballs need a good bit of prep, first grating all the veggies and then trying to prevent the meatballs from sticking to the pan..then letting them cook in the oven.. it all takes time.. So I put my thinking cap on, and I,ve come up with a few hacks.. My new and improved speedy meatballs in marinara sauce take less than an hour to cook from pack to plate, and still have all the taste of the original ones ..
The first thing you will need is a mini muffin tin, I picked up this one in deaz for €1.49.. by cooking the meatballs in
this you don,t need to keep turning them on the pan (leaving the frying pan out all together) .. When you roll each meatball, place each one in the tin and turn them only once after 15 mins.. (there is 12 holes so make 12 meatballs and place them in each hole) good eh…

- spray of olive oil/frylight for slimming world
- 500g pork mince
- 1 eating apple
- 2 onion
- 1 red pepper
- carton of passata (around 400g)
- a garlic clove
- tablespoon tomato puree
- a teaspoon of thyme
- a teaspoon of basil
- a teaspoon of oregano
- a sprinkle of the same herbs for the sauce
preheat your oven to 180c
Grate one of your onion,s and add it to a mixing bowl with the pork mince, and herbs .. (this is the ony grating you need to do) make 12 meatballs and place
onto your muffin tins .. put into the oven at 180c and cook for 30 mins, turning once after 15 mins ..
cook pasta according to packet
peel and chop the other onion, apple red pepper and garlic
Put a saucepan medium heat , spray with olive oil/frylight and add the chopped veggies , garlic and apple..
after around 8 mins when veggies and apple has softened add the passata and tomato puree .. put on a low heat cover with a lid and cook for 20 mins
blend with a hand blender
add a sprinkle of basil, oregano and thyme
add the cooked meatballs and stir..
serve with pasta…
and thats it!!! in half the time.. but just as much taste x
