I had a major parenting win today! woo hoo.. My Broccoli  hating miniature ate half a head of green stuff, without realizing.. Not to bore you with the benefits of eating  your greens.. I had almost giving up on serving it for “yum”.. When she would spot it on her plate she would just fling it off it ,, say the odd “yuck” to it and tell it ” I don,t like you!! “(I used to tell her “don’t  be mean to your broccoli, and eat it) but that doesn’t make much sense eh.. 😉 Until today I had a break through with my “Broccoli soup for Broccoli haters” and ive got  of photo graphic evidence of her eating it! and even better, when she was finished she looked at me and said “more sloup mam?”

For any slimming world folks.. this soup is a great lunch if you’re doing an sp day.. it serves 4 so you can use the cheddar as you healthy A and syn or leave the shaving,s of Parmesan

For any one else who just likes Broccoli… this Broccoli soup is fricking amazing .. but don,t just take my word for it.. x look at the evidence of exhibit A


Get messy Have fun x One Yummy Mummy


  • frylight or olive oil
  • 2 onions
  • a half of butternut squash
  • a head of broccoli
  • 1 crushed clove of garlic
  • 2 chicken stock cubes (low salt for the kiddies)
  • 120 g a good cheddar cheese
  • Some Parmesan shavings to serve


Spray a large saucepan with fry light/ olive oil (you will need a saucepan with a lid)

Peel and chop your veg and crush the garlic

Soften the onion, garlic and butternut squash .. frying for 5 minutes

Add the chopped broccoli

Crumble over the chicken stock cubes and pour over enough water just to cover the veg..Broccoli soup

Simmer on a medium heat and cover with the lid

Simmer for 40 mins until the veg is cooked

Blend with a hand blender and add your  cheddar.. (add more water if needed)

Serve with shavings of Parmesan x

  2. MMM, sounds yummy! Greatly of getting veg into kids can often be hard, this looks like a great way to get them to enjoy it – well done and thanks for sharing the recipe!

  3. This sounds great, Monkey actually quite likes broccoli but I would give this ago regardless, I love that its SW compatable as I will be heading back there in May once I have had a couple of weeks to recover from the birth of my second. Great recipe x
