Cajun chicken sizzlerWelcome to week 2 of   “Friday night dinners”… This is where we put “yum” to bed.. Open the wine, ( not giving it time to breath) and  cook  something for the grown ups .. a little celebration of the start of the weekend,, This week we had “Cajun chicken Sizzler”… served with rice.

This dish would be something I would order, if I was out and spotted it on the menu (it comes out sizzling on a hot plate.. very dramatic ).. But I have never found a recipe on-line for it!!  So I conjured up this one my self.. Another added bonus is, my version is  free on “slimming world” Save the syns for the wine.. That,s my motto 😉  x I serve it with rice, but it would also be lovely with home-made wedges..

Ingredients (serves 4)

  • fry-light/ olive oil
  • 4 chicken breasts
  • 2 onions
  •  3 peppers (green, red and yellow)
  • small pack of mushrooms
  • 1 red chili
  • 2 garlic cloves crushed
  • 2 tablespoons of Cajun spice (I use schwartz)
  • 1 table-spoon of chopped fresh thyme (you can use dried.. but the fresh is better) and use some to garnish at the end
  • 1 tea-spoon of paprika
  • 1 tea-spoon of ground all spice (like the one you use for fruit loaf)
  • 1 teaspoon of hot chili powder (depending on how hot you like it )
  • 1 tablespoon of balsamic Vinegar

Method

1,Cut the chicken breasts into strips and put into a zip lock bag.. Add 1 tablespoon of Cajun spice Cajun chicken sizzler(leave the other table-spoon for when cooking your veggies) also add 1  crushed clove of garlic, the chopped thyme, paprika, allspice and Chili powder.. shake the chicken around the bag so it gets fully coated with the spice and leave in the fridge,, for at least a half an hour…

2, Slice your peppers mushrooms and chili, cut the onions into chunks  ..

3, Spray a large pan with frylight or olive oil and put it on high

4, Just add the chicken on its own to the pan.. frying  for 10 mins and letting it charcoal a bit ..

After 10 mins take the chicken off  and leave to one side…

5, Spray the pan again with frylight/ olive oil if it’s needed (there will be lots of  yummy Cajun spice on the pan from the chicken) and add the sliced peppers to the pan first.. allowing them to get a good bit of colour on them.. then add the onion, chili, mushrooms,  and other crushed garlic clove mixing it all together… fry for another 10 mins .. adding the other tablespoon of Cajun spice and the balsamic vinegar.. now season with salt and pepper

6, Add the chicken back to the pan and mix well .. turn the pan down.. cover and simmer for 20 minutes..

7, While it simmer,s cook your rice ..

Serve garnished with fresh wine… ;)…. Thyme I mean Thyme x x

  2. I haven’t been anywhere with sizzling plates in years and years but I remember them so well. i always wanted the sizzling dish when i was a little kid but was obviously never allowed!

    • ha ha .. we must be so behind the times 😉 .. sizzling plates .. hot stones.. all still very big in Ireland.. well in the places i go to
