When “yum” has gone to bed, on a Friday night. I love to cook something  a bit different…  A meal just for the grown ups, (to accompany  ,soak up the wine)  As this isn’t typically  food for children,  I never thought about putting it on the blog. Until a friend  started asking for the recipes, (and me, being to lazy too write them out) I thought I,ll  run a series of “Friday Night Dinners”. Test the waters and see how they go. (your feed back would be great on this one x )

Now I have to be honest, with making sure “yum” is always getting the good stuff, I may of taken the eye off the ball  myself (as mammy,s do) .. After Christmas I was feeling the bloat ( gained a few pounds, putting it  mildly)..  I started Slimming world and an exercise class, and am now feeling great.. My point being, all my Friday night dinners are “slimming world Friendly” (save the syns for the wine that,s my motto 😉 Healthy doesn’t have to be bland!!! We have to live x The first recipe of the series   is “my slimming world friendly Jamaican chicken”, I serve it with potato wedges, salad and corn..it,s  full of flavour and spice.. and free on the extra easy plan.

Ingredients

1 pack of chicken thighs (1000g) .. remove all the skin and fat with scissors

The Marinade
in a little bowl mix
1/2 teaspoon of 1 nutmeg
1 teaspoon of cinnamon
1 tablespoon coriander
1 teaspoon of allspice (as in the one you use in fruit cake)
1 teaspoon black pepper


 

In a separate bowl  blend
1 bunch scallions, chopped
1 large onion, roughly chop
1 or 2  chilies  peppers (3 if you like it really spicy)
10 sprigs thyme, leaves picked
10 garlic cloves


blend all of the above in bowl and stir in the following:
2 freshly squeezed lime,s
1 cup soy sauce
2 tablespoon,s of sweetener

 

Method

Remove all the fat and skin of your chicken with a pair of scissors..

Rub the marinade into your chicken and leave in the fridge for 2 hours (leave over night for more intensity if you want)

Spray an ovenproof dish with fry light

cook chicken for 40 mins

serve with homemade wedges and salad
