kiddy chicken Fried Rice

So “yum” has been going through a bit of a “yuk” phase…. ¬†I know it,s more a control thing, than the food itself. She is two, and want,s to let me know she’s not going to agree with everything I have on the menu ūüôā¬† For now, i,m just going with the flow and not making a issue out of it… I also have a few tips to fall back on if needed. When I’m stuck, My kiddy fried rice recipe always goes down a treat if all else fails! (little chancer)

This is a really easy way to cook egg fried rice (with out it ending up like scrambled egg) The trick is to use cold cooked rice ,¬†frying your egg on one end and your veggies on the other I can honestly say I have never had a child refuse this one… ¬†(YET)

Ingredients 

  • 2 tablespoons of sesame¬†oil
  • 2oogs weight of uncooked rice ¬†boiled it and cool it rice¬†
  • 4 chicken breast
  • 2 tablespoons cup sweet corn
  • 3 spring onions chopped finely
  • 2 cloves garlic, minced
  • 1 centimetre¬†cubed ginger
  • 2 eggs
  • 2 tablespoon ¬†soy sauce
  • 2 tablespoons of honey
  • 1 tablespoon oyster sauce

Method  serves 4

  • Prepare rice according to the packet. When It’s cooked rinse it and give it a good drain leave to one side
  • put 1 tablespoon of sesame oil ¬†on medium heat in your wok
  • chop chicken and fry in the oil for 10 mins, remove when cooked and leave to one side
  • grate garlic and ginger and slice carrot and spring onion in small slices
  • fry garlic and ginger for a min and add carrot and spring onion fry them on one side of the wok cracking and frying your egg on the other side
  • when the egg is cooked break it up with a fork
  • add back in the chicken and rice and give a good mix also adding the corn, making sure all the veggies and egg is mixed with the rice
  • finish off by adding the other tablespoon of sesame oil soy sauce, honey, oyster sauce and give another good mix.

  1. I’m always a bit wary when using rice, because of reheating bacteria problems. Can this be reheated once it is complete? Lovely recipe, I’m gonna try tonight.

    • hey, to be honest I wouldn’t recommend reheating it once its cooked… much better to serve once cooked… Thank you so much for taking the time to comment
