11 am snack is a big thing in the yummy household and my savory ham and cheese muffins are perfect,.looking back to my childcare days when I worked in a creche. Every day with out fail the kids would gather round the table , have a chat or babble and, share, enjoy or throw their snack. It was just as much about the social aspect to eating than the food… and I always looked at it as something they will take with them forever… (enjoying meal times is not always about the eating)
Every day at 11 o clock, (when I can) I now have my coffee, and my little one has her “nack” as she calls it.. Its usually something small to tie us over to lunch, a piece of fruit, some rice cakes , crackers and cheese or these savory ham and cheese muffins. But its the time of day we spend together having a chat and enjoying each other,s company .. (shes two so this lasts around 10 mins at max)
I am not a baker… more a cook .. so these are super easy. Between pep and cooking take around 40 mins. The mixture makes 12 and they will last a few days in an air tight container, in the fridge. They are great for lunch boxes and go well with soup too

- 6 slices of ham
- 90g Cheddar cheese grated
- 75g butter/margarine
- 1 egg
- 250ml milk
- 300g self-raising flour
- ½ teaspoon paprika
- tea spoon tomato puree
- tea spoon of oregano
Pre heat the oven to 190C gas mark 4
lightly grease the muffin tin
cut the ham into chunks and grate your cheese
cut the butter into pieces. Beat the egg with the milk
sieve the dry ingredients into a large bowl.. the flour and paprika add the oregano and rub the butter into the flour until it looks like breadcrumbs
add the ham and cheese, and then pour in the egg and milk… mix thoroughly
spoon the mixture into a muffin tin and cook for 20 minutes ..
Try to cool before you eat!!!
You can try lots of different ingredients like.. ham pineapple, corn, courgette to the muffin mix .
