Beef Goulash for under a tenner

There,s a few things in life that make me really happy! A  glass of red on a Friday night, cuddles from little” yum” in the morning, and a family meal that everyone eats for under a tenner! Beef goulash is one of them meals that all the family  devour and an added bonus you can pick up the ingredients in a simple dash round your local supermarket!!, It’s low in fat, full  flavoured and  tastes amazing with a glass of red (happy days)

The best way to cook beef pieces is to brown it.. and cook on a low heat for as long as you can… (4 hours on a gentle simmer works for me). That way all the fat and tissue breaks down, making the beef just melt in the mouth.

  • 1 teaspoon of olive oil/ a few sprays of frylight
  • 450g stewing beef  pieces (remove all visible fat)
  • 1 tablespoon plain flour
  • 1 large Onion, chopped
  •  2 clove Garlic, minced
  • 3 large Tomatoes, diced
  • 1 red pepper, thinly sliced
  • 2 tbsp tomato puree
  •  2 tbsp Paprika (sweet)
  •  300ml beef stock cube
  • 2 tablespoons Creme fraiche

Method  (serves 4)

Heat a teaspoon of olive oil in a casserole dish or heavy-based saucepan.

Sprinkle the beef with the flour and brown well, in a pan on a medium heat

chop onion, mince garlic, and chop tomatoes with the red pepper and add to the pan with the beef

fry until softened, adding the tomato puree and paprika, and give a good mix

finally, pour over the beef stock. cover and cook it on the hob on a gentle heat for about 4 hours,

after the 4 hours dollop in the Creme fraiche before serving with rice

top notch grub on a budget and well worth the wait x
