Versatile veggie sauce

wpid-2015-10-08_13.41.14.jpgI had a Bottom drawer of the fridge full of vegetables and needed to use them up, before they went off.

I find a Basic veggie tomato sauce the best way.

I leave this  sauce a bit chunky, but you can wiz it up with a blender if you have a little one, who doesn’t like the lumps!!!  Its so versatile, as it can be used for bruschetta  or french bread pizza the next day ….(the other day I had a little one who  “hates veggie,s” gobble up 2 french bread pizzas) Score x wpid-2015-10-11_09.44.01.jpgwpid-2015-10-11_09.46.55.jpg

It Tastes so much better than any shop bought jar which is full of sugar… and really easy to make.

The only problem is…… When my little yum eats it with spaghetti, she is covered in it! And enjoys a good wash in the sink when shes done.. A sign of a great meal eh…..

  • 500 g passata
  • 2 carrots
  • 1 onion
  • 1 courgette
  • 2 sticks of celery
  • 2 cloves of garlic
  • 1 tablespoon tomato puree
  •  1 tea spoon balsamic vinegar (optional)
  • 1 bay leaf
  • tablespoon of dried basil
  • tablespoon of dried oregano
  • tablespoon of dried  thyme

(peel the green skin) and grate the courgette

crush garlic

spray a pan with olive oil.. or use a small teaspoon and put on a medium heat

soften the veg on the pan for 15 mins


wow look at that colour

add garlic and bay leaf and  tomato puree and herbs  and cook for 5 minswpid-2015-10-08_21.01.59.jpg

finish of with passata and cook for 15 minutes

serve with your favorite pasta!

To make french bread pizza..

just top some baguettes with your veggie sauce, add some mozzarella cheese and put under the grill until cheese is melted.
