Pork and Apple Meatballs in Marinara sauce

These meatballs are such a hit in the yummy house hold… I’ve up dated and amended the recipe a few times.. (each time it gets tastier!) The pork mince is a great alternative to mince beef.

Also some jars of pasta sauces can have more sugar in them than a mars bar!!! My marinara sauce is sugar free and great way to sneak in a few veggies. (also it tastes divine) This dish is one of ” yum,s” favorite,s…  A sign of a good dinner here , is when it gets all over the table, sleeves, hair and face… success all round  x

Ingredients

  • spray of olive oil
  • 500g pork mince
  • 1 eating apple
  • 1 onion
  • 1 carrot
  • 1 courgette
  •  carton of passata (around 400g)
  • a garlic clove
  • tablespoon tomato puree
  •  a teaspoon of thyme
  •  a teaspoon  of basil
  • a teaspoon of oregano
  • and a sprinkle of the same herbs for the sauce

Method

Grab a bowl and a deep oven proof dish and a frying pan

Heat the oven to 180 C gas mark 4. Put your frying pan on a high heat with a spray of olive oil.

Grate all the veg and apple

Put the pork mince into a bowl with the basil, thyme, oregano and some grated onion.

Get hands into the pork mix and form small meatballs.

Don,t move them about too much on the pan. Turn them gently with a fork! When the meat balls are browned and sealed, leave them to one side while you make the sauce

In a deep ovenproof dish add  passata, grated veg, and  apple with crushed garlic.

add in the tomato puree and a  sprinkle of thyme basil and oregano

Add the meat balls to the sauce stir

cover the dish and put them in the oven for 50 minutes.

ta da !!!! delicious Serve with  pasta!!! Get ready for the beautiful smiling red sauce faces!!!pork and apple meatballs
