Butternut squash soup

Doe,s anyone else feel a chill in the air? Yep Autumn is setting in… I love this time of year, Especially the  Autumn colours, I used to love collecting leaves, to bring into school for the nature table.. ( come to think of it,  autumn leaves and frog spawn, in spring were the only things on our nature table.) In summer and winter, it was pretty much just a table! Ok i,m rambling now.

I just crave soup this time of year..  this one fits the bill with the autumn colours.  Its really nutritious…  friendly on the purse strings, kiddy tested…. and the homemade herb croutons are delicious. You can use either milk or low fat coconut milk to make the soup creamer at the end,( if you have young babies use milk).. with older kids use the coconut milk. (what ever suits the kids and your taste)

Ingredients

  • 1 butternut squash
  • 3 carrots
  • 1 onion
  • 2 garlic cloves
  • 1 pint of hot chicken stock cube
  • 1 tea spoon of cumin
  • 1 teaspoons of cinnamon
  • 1 teaspoon of nutmeg
  • 1/2 pint of milk OR half a can of half fat coconut milk (depending on kids age and taste)
  • 1/2 teaspoon olive oil

Croutons

  • French baguette (bread roll) (1 day old)
  •  1 table spoon of melted margarine
  • 1 tea spoon basil
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon of Parmesan cheese (optional)

Method

To make this soup you will need a large sauce pan

Boil the kettle

Peel and chop the butternut squash, and the carrot.

Dice the onion and mince the garlic.

Put  olive oil in the  saucepan and soften the onions with the cumin over a medium heat..

Add butternut squash, carrot and garlic and stir… getting all the flavor in.

Add the cinnamon, and nutmeg stir for a min

Add the pint of hot chicken stock and cover with a lid and simmer for 25 mins

When veg has softened

Add the milk or the coconut milk  and blend

Put on a low heat while you make the croutons.

For the Croutons:

Put a frying pan on a medium heat

Chop the baguette into cubes

Put melted butter in to a bowl

Put herbs and Parmesan in a separate bowl

Dip the cubed bread into the melted butter and then into the herbs and then fry on the pan until croutons are toasted and crispy..

Serve Soup with croutons on top…. yummy xxx
