Breakfast is the most important meal of the day. Porridge is one of the healthiest things you can eat for breakfast... The only problem is that most kids hate it.
It got me thinking…. what do kids love???
lets make them some Porridge pancakes…. but shhhh don’t tell them,,,, they,ll never know x .. (easy peasy to make too)

I got a lovely message in my inbox yesterday.. from a mam, who has been using my recipe for porridge pancakes since I posted it last year.. !!!
She said ” she blends the mixture together and when they are blended her triplets don’t even notice the oats. Her girl doesn’t like bananas and she doesn’t notice when she adds banana, to the pancake batter. Also she almosts dry fry,s to get the American look. Her husband thought she bought them when she made them the first time ha ha. What a compliment!!! (she also said she’s going to start sneaking more fruit) love it
Recipe is below.. and I’m going to try blending them myself… (keep the messages coming x I love hearing for you )

- 3oz of plain flour
- 12oz of porridge oats
- 1 banana
- 1 teaspoon of baking powder
- 1/4 teaspoon ground cinnamon
- 230 mls of milk
- 2 tablespoons Margarine
- 1 large egg
- olive oil in a spray bottle
Get 2 mixing bowls
Sieve the flour and mix all the dry ingredients into one bowl
melt the margarine
Whisk the egg and milk in the other bowl
Add the egg and milk to the dry ingredients mixing well
Finally, add the melted Margarine and give a good last mix
Put in the fridge to rest for a half an hour, to let the oats soften add banana and blend (if you wish)
Spray a large frying pan with a little olive oil and put on a medium heat.
When taking the batter out of the fridge give it a good mix
When the pan is hot, add the pancake batter.
Hole,s will start to appear in the batter, then flip it over (this should happen after about 10 mins) let the other side cook until golden brown.
serve with your classic pancake companions …..(porridge? what porridge)
