One pan pasta and tasty hidden veggies

As busy parents finding a good one pot dish is like winning the lotto.  This one has been doing the rounds for a while.  I have amended it by putting in some grated veg and finishing it off with passata to add some extra flavour. one yummy mummy “yum” love,s  Slurping up  pasta, lady and the tramp style, so this one is perfect for that. It,s cooked in less than 30 minutes and serves a family of 6 easily. Also its as cheap as chips…. and for any slimming world folk its free! x great for using up for what ever in the cupboard and fridge

So its healthy, economical, effortless, super quick, with  only one pot to wash up.. Now if only I had the lotto numbers x Have fun get messy one yummy mummy x

Ingredients

  • 250 g of spaghetti
  • 1 punnet of Cherry Tomatoes with stalks removed (halved)
  • 4 cloves garlic, crushed
  • 2 sprigs basil, plus torn leaves for garnish (fresh works better …but a tablespoon of dried will also work if your stuck)
    one pan pasta
  • 1/2 pint of hot chicken stock cube
  • 1 grated onion
  • 1 grated carrot
  • 1 grated courgette
  • 1 red pepper diced
  • tablespoon tomato puree
  • tablespoon of oregano
  • teaspoon of thyme
  • 500g passata
  • Freshly grated Parmesan/ or cheddar cheese, for serving (whatever you prefer) for sw just use your healthy extra a allowance

Method

use a large deep pan (ok so i use a wok. I am a mummy not a chef!! I use what ever I have at hand xx)

Major tip….. just cover the pasta with the 1/2 pint of hot chicken stock,,, then place the veggies on top,, the veggies will release water as the cook too,

Bring to a boil over high heat. Boil the mixture, stirring and turning pasta  with tongs.wpid-wp-1438805966660.jpeg
After 10 minutes boiling water should be nearly evaporated, and veggies cooked

Add passata and tomato puree and  herbs … simmer for a further 10 mins keep the pasta turning .. season with a little salt and pepper
