Moussaka (mummy style)

 

Hey Yummy Mummy,s and Daddy’s,moussaka

As you all know i have a knack for hiding veggies!! I have to say this recipe is ideal for hidden veggies. When I have made Moussaka in the past for adults, the aubergine tastes really bitter, (apparently the best way to take the bitterness out of them is to soak them in salt.) Not a very good idea for kids! By peeling the purple skin, grating it with the other veggies, and tossing it in a few sprays of olive oil .. the bitterness completely disappears! I made this dish for three kiddies this week and I got three clean plates…  (when the veggies are hidden they cant pick them out…. ) very sneaky eh…

                     Ingredients

  • 500g lean mince beef
  • 2 garlic cloves
  • 2 carrots
  • 1 aubergine (peeled and grated)
  • 2 courgettes (peeled and grated)
  • 1 onion grated
  • beef stock cube (you can use the salt free ones)
  •  1 carton of  passata
  • 1 tablespoon oregano
  • 250g pasta penne (half pack)

Mummys white sauce

  1. 2 tablespoons of plain flour
  2. 2 tablespoons of butter or margarine
  3. 1/4 pint of milk
  4. 1/4 pint of hot chicken stock cube (add this to the milk so it 1/2 pint of liquid together)
  5. 100g feta cubes

Method

Pre heat oven to 200C Gas mark 6 (get a deep ovenproof dish)

Cook pasta according to packet

Peel and grate all your veg and garlic, Soften in a pan on a medium heat with a few sprays of olive oil. Crumble in the beef stock cube.wpid-wp-1438290394652.jpeg

In the other pan brown the mince.

use a separate pan so you can drain off any excess fat when browned.

When veg has softened and mince is browned add veg to the mince.

Add passata  oregano and pasta and put on a low heat pasta and mince

Make mummy’s white sauce 

This is a fool proof white sauce that is a basis for lots of recipes. It might take a wee bit of practice. but if you do get lumps sieve it (shh i wont tell any one x)

Melt butter in a saucepan and add the flour and whisk until the butter and flour has stuck to the whisk (don’t worry about this it will work out).wpid-wp-1436194609673.jpeg

On a medium heat   slowly add a quarter of the liquid and whisk until its thick with no lumps whisking for around 5 mins.

Add another quarter of the liquid and whisk for 5 mins. Add the remainder  and keep whisking  on a high heat until the sauce is creamy looking with no lumps (add a little more hot water if consistency is too thick for you)

Turn the heat down and simmer for 5 mins.

moussakaGet your oven proof dish and add your mince and pasta, top off with white sauce, finish off with cubes feta cheese.

Bake for ten mins until topping is bubbling!!! Delicious xx (let cool before serving to the kiddies
