Sweet potato cottage pie

There’s nothing like a bit of comfort food after a hectic few days!! It’s just like a big hug. The ultimate comfort food in the yummy household is cottage pie. This one tastes really luxurious with the sweet potato mixed in the topping. With the added bonus of having no butter. My little yum just cleans the plate,, as seen below xwpid-1432240117441.jpg

500 g of lean mince beef
2 carrots
1 onion
2 sticks of celery
1 tablespoon of tomato puree
1 teaspoon of basil
1 teaspoon of oregano
1 beef stock cube in a half pint of hot water

2 teaspoons of corn flour with a tiny drop of water to thicken

for the Mash
3 mashing potatoes
3 sweet potatos
Sprinkle of cheddar


Preheat oven to 180 c gas Mark 4 (get a deep ovenproof dish, saucepan and large pan, I use a wok!!!)
Peel and chop your potatoes and boil in a medium saucepan with a lid. (Boil for around 25 to 30 mins until potato are soft)wpid-1432239705791.jpg
Put a large pan on a medium heat and add the mince no need for oil and fry until mince is browned breaking it up as it fry’s.
Grate your veg with the garlic and chop the celery finely.wpid-1432239760502.jpgDrain all the fat of the mince!!

Return the mince to the heat and add veg and fry for 15 mins

Add tomato puree, basil, oregano and beef stock

Add the cornflour and cold water to thicken.

When potatoes are soft mash and add a sprinkle of grated cheddar.
In an ovenproof dish add the mince and veg and top off with the potato. Make some lines in the potato with a fork to get a rustic look! Cook in the oven for 35 mins!!
