Kiddy -fied Chicken (kfc) with Potato wedges

Winner Winner chicken dinner….. hey all you yummy Mummy,s and Daddies, question? Why is kfc so finger licking good? because its full if grease and flabby bits. That,s not juice dripping down your finger, its fat!!! It’s just well disguised with all those spices.. any thing that is served in a bucket couldn’t be good for you. My kiddy-fied chicken has all the fat and skin cut off. Its oven baked, so all your left with is wholesome tasty chicken goodness. (one yummy daddy says its better than the real thing). You know exactly what your kiddies are eating .Served with wedges, it’s a great sit down with the family meal. so place in the middle of the table on a platter and grab… (but be quick) Enjoy, Get messy, Oneyummymummy xxx

ingredients

  • 1kg pack of chicken thighs
  • 1 egg
  • 7 table spoons of breadcrumbs
  • 7 not so secret spices below)))
  • crumbled chicken stock cube
  • 1 tea-spoon of ground ginger
  • 1 tea-spoon of paprika
  • 1 tea-spoon of parsley
  • 1 tea-spoon of garlic powder
  • 1  tea-spoon of thyme
  • 1 tea-spoon of oregano

potato wedges

  •  half a bag of baby potatoes
  • tea-spoon of sweet paprika
  • tea-spoon of garlic powder
  • 1 tablespoon of olive oil
  • a zip-lock bag (or any bag)

Method pre heat oven to 200 c gas mark 4, spray 2 baking trays with olive oil Get a Sharpe scissors and cut of all the fat and skin off the chicken thighs.wpid-1429295898072.jpgMix the bread crumbs and the 7 spices in a large bowl. Put a tablespoon of flour on one plate  and a beaten egg on an other. Now to get messy!!! Get a piece of chicken, dip in the flour, now the egg, and the breadcrumb mix (give it a good covering ) and place on the baking tray. repeat with all the chicken and leave in the fridge until you do the wedges. Wash and quarter potatoes. put the garlic powder and paprika and olive oil in the bag, put wedges in and shake. covering the wedges.wpid-1429295981217.jpg put on a baking tray and put in the oven with the chicken. (chicken middle shelf, wedges top shelf) and bake for 45 mins.
