When it comes to making lasagna, I always get asked the same question.. how do you get the pasta sheets perfect? do you boil it first?
No I never boil it .
The thing is, try not to let your pasta sheets touch the edges of the dish (this makes it hard, stick and dry out).Cover the sheets with plenty of sauce too that’s what cooks the pasta.
(chefs never tell us this cause they think we already know this stuff) We don’t!!! and as busy parents we don’t have time to be messing about with pasta!!
This recipe has lots of hidden veg too .. Its really tasty and when ever Im invited to a family getogether, I know to come armed with it …

- 500 g pack of extra lean mince beef
- 1 carrot (grated)
- 1 onion (grated)
- 2 cloves of garlic (crushed)
- 1 courgette (grated)
- handful of chopped mushrooms
- carton of passata
- tablespoon tomato puree
- tablespoon of Basil
- tablespoon to oregano
- tablespoon of thyme
Mummys white sauce
- 2 tablespoons of plain flour
- 2 tablespoons of margarine
- 1/4 pint of milk
- 1/4 pint of hot chicken stock cube (add this to the milk so it 1/2 pint of liquid together)
- teaspoon of ground nutmeg
- A handful of grated cheddar cheese
- Pack of small mozzarella balls (or 1 big one just cut it up)
Method Pre heat oven at 180C gas mark 4.
On a large pan brown the mince (no oil needed) when mince is browned .. drain off the fat with a sieve
Grate carrot, onion, garlic ,courgette and chop the mushroom into small pieces, add to the pan and cook for 10 mins, and sieve off any excess liquid
Add passata , tomato puree, herbs mix and leave on a low heat while you make your white sauce.
Mummy’s white sauce
Melt butter in a saucepan and add the flour and whisk until the butter and flour has stuck to the whisk (don’t worry about this it will work out)
On a medium heat slowly add a quarter of the warm liquid (hot stock and milk) and whisk until its thick with no lumps whisking for around 5 mins.
Add another quarter of the liquid and whisk for 5 mins.
Add the remainder and keep whisking on a medium heat until the sauce is creamy looking with no lumps .
Add nutmeg (put in more hot water if needed but the thicker the sauce the tastier it is just make sure y0u can pour it over the top)
Turn the heat down and simmer. Simmer for 5 mins (if u do have lumps sieve them.. shhh I won’t tell any one!!! And the kids won’t know)
Now to layer up.
First put a spoon of the meat mixture on the bottom, then the sheets of pasta (making sure the pasta isn’t touching or touching the edge)
completely cover the pasta with the meat mixture. On top of this add more pasta. Cover the pasta again with the meat mixture and then top off with mummy,s white sauce.
Finish off by scattering small balls of mozzarella and a sprinkle of your favorite grated cheese.
put in the oven for 35 minutes!!!
